Η σημασία του ελαιολάδου στη ζωή μας εκτιμούνταν από την αρχαιότητα σε τέτοιο βαθμό ώστε ο Όμηρος το ονόμασε ‘υγρό χρυσό’.

Το ελαιόλαδο δεν είναι απλά ένα από τα τρία ευλογημένα αγαθά: οίνος, σίτος, έλαιον. Είναι το μόνο λάδι που μπορεί κανείς να απολαύσει μόνο του σε ψωμάκι γιατί είναι τόσο αρωματικό. Μετά από πολλές μελέτες των τελευταίων δεκαετιών είναι πλέον αποδεκτό ότι το ελαιόλαδο χαρίζει μακροζωία και καλή υγεία. Κατά Λουκά ‘ Μέγιστον αγαθόν προς πάσαν του βίου θεραπεία ο της ελαίας καρπός’. Η λήψη ελαιολάδου μειώνει τον κίνδυνο καρδιοπαθειών, καρκίνου, διαβήτη, αρτηριοσκλήρυνσης και προβλημάτων του γαστρεντερικού και ουροποιητικού συστήματος.
